Restaurants and bars

Nine kitchens, one of which never closes

Six restaurants and three bars. No buffet, no celebrity licensing deals, and nobody on the payroll whose job is to be photographed.

Booking a table

Reservations open sixty days ahead for Alma Fuego, Perla and Mirador. Tortuga, Botánica and the Bakehouse are walk-in only and always will be. If you are staying with us, the concierge can usually find something the same evening — ask before you give up.

Live-fire Spanish · $$$$

Alma Fuego

Everything is cooked over oak in an open hearth you can see from the dining room. Whole turbot, dry-aged rib for two, and a gilda that the bar will not take off the menu.

  • Dinner nightly, 5:30–10:30 PM
  • Level 2, above the lobby
  • Jackets are not required. Reservations are, most nights.

Coastal raw bar · $$$

Perla

Oysters flown in twice a week, crudo cut to order, and a white-wine list that leans Galician. Sit at the ice if you are eating alone — it is the best seat in the room.

  • Dinner nightly, 5–11 PM
  • Lobby level, west
  • Walk-ins welcome at the ice bar.

All-day diner · $$

Tortuga Café

Green chile, a proper patty melt, and breakfast at any hour, because somebody always needs breakfast at 3 AM. Counter seats and booths, both with the same view of the floor.

  • Open 24 hours
  • Casino level, north
  • No reservations. There is almost never a wait.

Garden bar & agave library · $$

Botánica

Two hundred and forty agave spirits, a bartender who will talk you through them without condescension, and a garden that smells like creosote after the misters run.

  • 4 PM–2 AM
  • Pool gardens, south end
  • 21 and over after 8 PM.

Pastry & coffee · $

ApostaMax Daily Bakehouse

Laminated pastry made overnight in the basement, a serious espresso programme, and the conchas that sell out by nine. Order at the counter and take it to the courtyard.

  • 6 AM–2 PM
  • Lobby level, east
  • Grab-and-go until sold out.

Rooftop lounge · $$$

Mirador

Twenty-seven floors up, facing west on purpose. Small plates, a short and very good cocktail list, and a DJ from ten on Fridays and Saturdays who keeps it conversational.

  • 5 PM–1 AM
  • Level 27
  • 21 and over. Smart dress after 8 PM.

Practical

Allergies, diets and children

Every kitchen keeps an allergen matrix at the pass and every menu is available in large print. Tell whoever seats you — they will tell the kitchen, and the kitchen will tell you honestly what they can and cannot guarantee.

Under 21

Welcome everywhere except Botánica and Mirador after 8 PM. Tortuga has a proper children's menu rather than three fried things.

Dietary

Full vegetarian and vegan menus at every venue, not a single substitution. Gluten-free bread is made in the Bakehouse, not bought in.

Dress

There is no dress code anywhere, apart from Mirador after 8 PM, where we ask for smart dress and mean it kindly.
